Đậu hũ cắt lát dày 1cm, đem chiên vàng đều rồi cắt thành sợi như hình bên.
Nấm mèo ngâm với nước cho nở rồi cắt bỏ phần cuống. Cắt nấm thành sợi.
Làm nóng 2 muỗng canh dầu ăn rồi cho cà chua và hành lá vào xào. Trút hết chả chay, đậu hũ chiên, nấm rơm, nấm mèo vào xào lửa lớn. Nêm hạt nêm chay, muối, đường, bột ngọt. Thêm 1/2 chén nước, nấu lửa nhỏ để gia vị thấm đều. Xào thêm khoảng 5 phút thì tắt bếp.
Mì chiên ngập trong dầu nóng rồi vớt ra, để ráo dầu. Khi ăn cho mì ra đĩa và phần nhân xào lên trên, trộn đều và thưởng thức.
