Trước tiên lót cái oven với giấy bạc cho cẩn thận nếu nước thịt có rơi xuống cũng đỡ lau chùi. Mở lò ở nhiệt độ 300 độ F cho nóng trước. Trộn gia vị với thịt cho thật đều và thịt phải thật lạnh nha cho thịt có độ dẻo( chừng 5 phút).
Lấy 1 cái rack ở trong oven ra. Xé 3 or 4 miếng giấy bạc vừa bằng size của cái rack. Mình bỏ nhiều giấy bạc chồng lên nhau để lỡ trong lúc nướng mà nước thịt có rớt xuống thì có miếng khác ở dưới hứng. Quét một ít dầu lên giấy bạc cho chóng dính nếu không sau khi nướng xong thịt sẽ bị dính và khó lấy ra lắm. Dàn hết thịt lên giấy bạc thiệt là mỏng cở chừng 1/2 cm. Rắc mè rang lên.
Cho vô lò nướng đã làm nóng sẳn với nhiệt độ là 300 độ F nướng 1 tiếng đồng hồ (bake) (Nếu nước thịt có chảy ra trong lúc nướng thì lấy giấy lau tay thấm bớt cho nước khỏi rơi xuống lò). Sau đó lật mặt dưới lên nướng thêm từ 20 tới 25 phút (Hay nướng tới độ khô nào mình ưng ý thì tắt bếp).
Sau khi nướng vàng lấy ra chờ 1 phút thì lấy kéo cắt liền, chờ hơi nguội cho vô hộp đậy kín hay bọc lại chứ không thôi để ngoài sẽ bị khô cứng.
